Baldeschi Extra Virgin Olive Oil
Baldeschi extra virgin olive oil is produced in October and November with cultivar olives typical of the Lake Trasimeno and Umbria region: Frantoio, Moraiolo, Leccino and Dolce Agogia.
The olive groves are all in the village of Tuoro sul Trasimeno around the town of Vernazzano.
The olives are harvested and processed in the mill within a few hours to guarantee a high quality product which remains our main objective.
We offer the opportunity to taste our extra virgin olive oil at our company shop, where you can discover the taste and aroma of an artisan product, rich in history and tradition.
Furthermore, we are pleased to offer our guests the opportunity to stay in one of our two farmhouses, immersed in the beauty of the Trasimeno area. You will be able to live an authentic experience, surrounded by nature, and taste the typical dishes of Umbrian cuisine, prepared with local products, including our extra virgin olive oil.
Our farmhouses are the ideal place to relax and regenerate, but also to discover the beauty and culture of Umbria, with guided tours of the cities of art, medieval villages and natural parks in the area.

Umbria and Lake Trasimeno
Lake Trasimeno and the Umbrian hills give our oil unique characteristics. II microclimate, mineral-rich soil and centuries-old agricultural tradition make our production a Made in Italy excellence. Buying our oil means bringing an authentic piece of Umbria to the table.

D.O.P. Umbria Colli del Trasimeno
This oil represents the authentic essence of our territory, the fruit of our native varieties: Moraiolo, Dolce Agogia, Leccino and Frantoio. The result is a harmonious and balanced extra virgin, characterized by fruity notes, a pleasant bitterness and a slight spiciness.
Monovarietal Dolce Agogia Evangelina
Dolce Agogia is a rare and precious variety grown almost exclusively on the shores of Lake Trasimeno. Its oil is distinguished by its delicacy and elegance, with hints of fresh almond, freshly cut grass and a light bitterness that blends with a unique sweetness.
Rooted in quality, inspired by nature
We start in the field with the care and cultivation of olive trees using integrated and sustainable farming methods.
It continues with constant monitoring of the olives until they are harvested.
Within twelve hours of harvesting, the olives are processed at the olive mill using innovative extraction methods with reduced oxidative impact.
Every stage of production, from harvesting to pressing, is carefully followed to ensure a superior quality product. Cold extraction preserves intact aromas, flavors and valuable nutrients, offering an oil rich in antioxidants and beneficial properties.
We filter the oil to retain all water particles that would compromise the preservation and quality of the oil over time.
We keep it at a controlled temperature and in the absence of oxygen to ward off oil’s greatest enemies: light, oxygen and heat.
We sell it in containers suitable for increasing storage: the innovative bag-in-box allows it to be consumed over time without letting in oxygen.
